Welcome to My Site!

This website is dedicated to sharing my knowledge and expertise in nutrition with articles about diet, cooking videos, recipes and my adventures with urban farming (well, it’s really backyard gardening).

My name is Maria Tucker and I am a Registered Dietitian who happens to be Asian, hence my site, DietAsian. I was born and raised in the Philippines, eating vegetables and fruits commonly grown there. I moved to the United States some 30 years ago, met my husband and started our family in North Carolina. We bought our first house and had a small vegetable garden with mostly tomatoes and peppers. It was not enough for me, missing vegetables I grew up eating back home. Most Asian vegetables are not available at your local grocery stores and you’d have to drive to an Asian store to find them. I got interested in growing them, inspired by the Pilipino children’s song, “Bahay Kubo”. This song is about a typical house in the Philippine countryside, called the nipa hut, surrounded by plantings of vegetables, including jicama, eggplant, winged beans, peanuts, yard-long beans, hyacinth beans, lima beans, hairy gourds, loofah gourds, bottle gourds, winter squash, radish, mustard, onions, tomatoes, garlic, ginger and sesame.

My goal is to help people learn about the wide variety of nutritious Asian vegetables and fruits and why you should eat them! From bitter melon to winged beans, I hope that by visiting my website, you will be encouraged to try some.
